educator joins Sublette County Cooperative Extension Service office
Weiwen Chai will start Aug. 31 as the University of Wyoming Cooperative Extension Service (UW CES) nutrition and food safety area educator serving Lincoln, Sublette and Teton counties.
Chai will be based in Pinedale.
Originally from Shanghai, China, Chai completed a doctorate in nutrition with a minor in statistics in 2004, a master’s degree in food science and human nutrition in 1996 and a bachelor’s in medical technology in 1998 from the University of Wyoming.
“She brings a strong nutrition background to the three counties and will also strengthen the expertise of the state nutrition and food safety initiative team,” said Susan James, federal relations and staff development coordinator.
Chai believes chronic diseases such as type 2 diabetes, cancer and heart diseases can be prevented through practicing healthy lifestyle behaviors such as good nutrition and wellness. “I hope I will make a difference in people’s lives through the effort I make in nutrition and food safety education,” said Chai.
Chai said her only knowledge of Wyoming prior to coming here was from viewing an old black and white movie with the story taking place in Cheyenne.
“I fell in love with Wyoming immediately after I came here,” she said.
Shanghai had a population of 12 million when she was growing up, lots of traffic, and “unbearably hot summers and cold, rainy winters,” said Chai. “I really appreciate Wyoming’s wide open space, beautiful mountains, fresh air, constantly blue sky, nice and cool summers and white and snowy winters.”
